500g of peanuts
500g of sugar
Method of Peanut Brittle
Step 1 Select 500g of fresh peanuts and wash them clean. Then drain the peanuts until no water left on the peanut red skins.
Step 2 Dry-fry the drained peanuts over low heat until red skins become crisp. During the process, you have to keep stir-drying back and forth. If for industry, a roasting machine for baking nuts is needed. Fragrance diffuses. This step is to get ride of red peanut skins and water inside them. Then peanuts for peanut brittle is prepared.
Step 3 Cool dried peanuts to eliminate its red peanut skins and seperate peanut kernels into two parts. Otherwise baked red coats will lead to bitter and affect the flavour of peanut brittle.
Step 4 Heat the pan and put some vegetable oil. Then pour one fourth quater of sugar into pan and keep stirring without intermittent leat sugar overbake and bitter.
Step 5 Small golden yellow bubbles will rise in the heating sugar. That means water is evaporating. Then add another one fourth quarter of sugar into pan. Next, repeat the above step 3.
Step 6 When the liquid becomes golden yellow and thicker, the syrup is ok. Catch a spoon and dip it in some syrup. Then put it in the water(if neceessary, cool water) and syrup will solidify. Have a taste to check whether it is crisp and sweet.
Step 7 Turn off the fire. Pour the roasted peanuts into the syrup and keep mixing until every peanut will be coated sugar.
Step 8 Put the peanut candy into the mould. Make it flat and press hatrd because it may be a little sticky.
Step 9 Divided it into several parts and cool the candy. Have a taste of your homemade peanut brittle with your family or friends.
