Mezclar los ingredientes seg\u00fan la siguiente f\u00f3rmula: 1000 g de semilla de man\u00ed, 120 g de pl\u00e1tano en polvo, 20 g de monoglic\u00e9rido, 50 g de sacarosa y 8 g de sal. Porcentaje: 83,5% de man\u00ed en grano, 10,0% de pl\u00e1tano en polvo, 4,2% de sacarosa, 1,6% de monoglic\u00e9rido y 0,7% de sal.<\/li><li>Molienda fina. Utilice un molino coloidal para moler de modo que la finura alcance unas 7 micras y controle la temperatura exterior de ambas moliendas por encima de 68 \u00b0C.<\/li><li>Enfriamiento y envasado. Cuando la temperatura baje de los 45 \u00b0C, llene el recipiente con mantequilla de man\u00ed. La temperatura adecuada es 29,4~43,3 \u00b0C. Para el envasado se suele utilizar una m\u00e1quina de envasado al vac\u00edo.
